Ipomoea batatas (purple variety) is rich in anthocyanins, polyphenolic pigments that act as antioxidants and natural colour enhancers. Anthocyanins deposit in shrimp exoskeletons, intensifying purple, blue, and red hues. Studies in aquaculture show improved pigmentation, enhanced immune parameters, and protection against oxidative stress when purple sweet potato is included in the diet.
